I’ve said it before and I’ll say it again, I seriously CANNOT believe how fast the weeks go.

Despite things being slower at work, this week has been super busy on the personal side. Tonight I’m heading to Omaha Fashion week with my friend Gina and we are both super excited! Starting the evening off with blowouts then wandering the VIP area for drinks/apps at the Omaha Design Center before the show starts. Can’t wait! Of course there will be a full recap of our night next week, so stay tuned. In the meantime, I’ll kick this mid-March Thursday off with three things I’ve loved this week…

#1 – This recipe. With an extra 5 people staying the night, I Googled ‘easy dinners for a large group’ and this was one of the first ones I came across; Mexican food is always a winner in our house so I knew I couldn’t go wrong. I modified it a bit, but it was the basis of our dinner this past Saturday. I added rice to the shredded chicken {intended to also add black beans but didn’t have them in my pantry like I thought–ughh!} and layered it a bit differently as well. The casserole itself was super simple so I had shredded lettuce, jalapenos, diced tomatoes, sour cream {not for me, unfortunately}, black olives and refried beans available to allow each individual to personalize their piece(s). The recipe was met with unanimous approval and we ended up with a row of leftovers–perfect for Kyle’s lunch the next day!

#2 – Running OUTSIDE! Well, I guess that is more geared towards last week because with Daylight Savings I can’t run outdoors during the week; at least until it gets lighter out. I was able to get my first few runs of the year outdoors last week and it felt AMAZING. A breathe of fresh air. Literally. Sure my shins, calves and arches of my feet hated me after experiencing concrete for the first time in months but it was so worth it. I was lucky enough to be able to pick up right where I left off last Fall in regards to pace and I just felt so much more refreshed and rejuvenated after the runs in comparison to how I feel after the dreaded treadmill.

#3 – Kate & Moose’s cutie earrings. Simplicity is key 99% of the time when it comes to jewelry for me. I’m usually spotted wearing these pearl studs, these gold hoops, or these oversized crystal studs so when I came across Kate & Moose I knew I could totally get behind Kate’s designs. Simplicity, delicacy, and the subtle statement-making look were what hooked me, plus the Bio section of her website is too cute! With stainless steel posts, these studs that I have in the large size do not irritate my sensitive ears, so that is clearly a win!
