It’s THURSDAY! Only 1 more day until a long awaited & much need 3 day weekend.

I know I’m not the only one who is overly excited about a long weekend. The forecast here in Omaha looks pretty pathetic–60%+ chance of Thunderstorms from today thru next Wednesday–but I can deal with that. Something about a rainy weekend kind of sounds amazing actually. It sounds like a marathon of Southern Charm, cuddling up under a blanket and an adult beverage or two is on my agenda. So I’m getting LASIK today–EEEEEEK! I’m freaking out but know the end results will be totally worth it. Now lets see what I’m loving this week:

#1 Chipotle Lettuce Wraps

I mentioned these yesterday in my sample meal plan but I love them so much that I figured they deserved their own post. They’re SO simple and I vary my ‘toppings’ to keep me from getting bored of them. I found this easy recipe on PALEOMG {my go-to for recipes lately} and took her suggestion of using Sir Kensington’s Chipotle Mayo. That stuff is bomb.com, seriously! I use either the Whole Foods brand or Applegate for the sliced chicken but you can obviously use whatever. Lunch is my least favorite meal and usually where I seem to get off-track so these lettuce wraps are perfect for me. I top my wrap with the meat, mayo, a few slices of avocado, and whatever veggie(s) I have on hand. Orange Peppers are my current favorite!

#2 These Nike Running Shoes

Everyone’s feet are completely different, so take this as you will. I am obsessed with these shoes. Oddly enough, these are actually the first pair of Nike’s I’ve ever ran in. I’m usually an Asic or New Balance only runner but when my sister Cassidy got these and loved them, I figured I would try them too. Worse case I knew I could just wear them out & about so they weren’t a waste! Well, I love them. They’ve got great support for my OrangeTheory workouts and they’re super comfortable. I haven’t ran more than 5 miles in them but for that distance, or less, I’ve found them to give me no issues at all. I personally find these to run a bit narrower than other Nike options, which I need, so I give them 10 stars! 🙂

#3 LASIK

As you noticed above, I’m getting the LASIK procedure done on both of my eyes today! Ahhh! Actually, at this moment you’re reading this I could be under the laser. How awesome, weird, scary and cool is that!? I’ve always said if I had a couple thousand dollars extra laying around that I would totally get LASIK done vs. a boob job or something similar {no judging if you’d choose the other–this is just WAY more practical for me!}. Well lets just say we will never have that kind of ‘extra’ money laying around so I figured the procedure was a long shot. But then one day, about a month ago, Kyle says he was/is surprising me with the most amazing Anniversary gift ever: perfect vision! Fast forward to today and that gift is coming to fruition and I couldn’t be more excited. How great of a husband is he?! Don’t feel bad for him though, he’s getting a fishing boat as his gift so we’re basically even. 🙂
