We’ve officially made it into a new year! Monday Musings – Vol 17 is my first post of 2021 and I’m excited for what that means. On many levels! So with that, lets just dive right into the week:

What I’m NOT doing this month…

Spending money. I got a lot of questions about why I’m doing that + what exactly it means. In January I am not buying any clothes, shoes, accessories, decor, etc. Basically only spending on necessities like groceries and gas. I do have a hair appointment on the 15th that is ‘allowed’ as well as a nail appointment or two. When I say allowed I don’t mean Kyle is bossing me around. This was my idea for myself. Sure he’s happy about it, but we have joint accounts so it’s all the same in the end. Goal is to sell a bunch of clothes on Poshmark that I don’t wear, purge and attempt to minimalize. Plus we have some very LARGE purchases coming up so I need to get my hustle on and NOT be buying yet another pair of joggers. Though I’m having a reeeeealllyyy hard time not buying THESE NEW ONES in orange from Target or any of their new arrivals for that matter…

What I re-started…

Journaling. I love writing. Clearly. But I use to journal regularly and for years I’ve gotten away from it. My mother-in-law bought me the prettiest little blank notebook as a stocking stuffer so I took that as a sign. I started again on the 1st and my goal is to write a page daily. No rhyme or reason behind what I write, more like whatever comes to mind in the moment. Writing after my alarm goes off and I do a meditation, while sipping my pre-workout + BCAA mix. Papa wrote about his travels and it was so cool to read some of his thoughts and experiences; picture him writing it and reading it in his voice. Maybe someday one of my {hopeful} grandkids or great-grandkids would be interested to read what I was thinking?

What we’ll be eating this week…

After an overwhelming amount of people requesting more details on our meals, recipes, my diet {or lack-thereof}, etc. I figured I would share what our week of meals looks like. Monday Musings – Vol 17 will be the start to what I will hopefully do every Monday in sharing what the plan tentatively looks like for dinners in our house. Here is what I’m currently thinking:

  • Meatless Monday – sweet potato + black bean enchiladas w/ brown rice
  • Tuesday – lentil pasta + jalapeño chicken sausage, spinach & arrabiata sauce
  • Wednesday – sheet pan pork chops w/ roasted potatoes & Brussel Sprouts
  • Thursday – shredded chicken burrito bowls w/ fajita veggies + rice
  • Friday – wagyu beef burgers w/ veggie fries
  • Saturday – take-out (the local family-owned Mexican spot is our go-to)

Random Ramblings…

  • The Always Pan by Our Place gets a 10/10. I cannot say enough good things about it. The rave reviews are legit. Ever since we moved into this house, our gas stovetop has ruined my pans. Seriously have thrown 4 away because they weren’t even salvageable. This Always Pan really is non-stick, the bottom isn’t getting fried by our flame & it’s SO EASY to clean. On the fence?   • Lots of questions on my thoughts after using Modere’s Liquid Collagen and I’ll keep it simple: the results weren’t worth the cost of the collagen. Finished my last bottle in mid-December and decided not to order again. If it’s in your budget, I did like the taste & it was super easy to use. If it’s not, you’re not really missing out {in my opinion}. I didn’t notice any difference from it vs. powdered collagen. Currently using Dose & Co. right now and I like the variety of options they offer, and LOVE that they have a dairy-free creamer choice for me.
  • Random Amazon find – THIS pill organizer. I take my vitamins first thing in the AM but because Kyle gets up later than I do, he often forgets his. I am planning to leave this on the counter, by the coffee maker, to keep it top-of-mind!

  • Last week Kyle put up my door frame pull-up bar up in the basement and I’m so excited! I’ve missed working on pull-ups so this makes me feel less like I’m missing out on being in a real gym. It’s inexpensive, fits in any doorway that has an exposed frame and can be used for a lot of both arm and core work!
